Gut-Loving Potato Salad

Spring has arrived and salads are back on the menu! Add a little potato salad to help keep your gut healthy.

There are a lot of thoughts that potato is too starchy and we shouldn’t eat it BUT the ‘resistant starch’ from a boiled potato provides a prebiotic for your gut. This means it actually feeds your good bacteria. They need to eat!

The best way to activate this resistant starch is to boil, then cool the potatoes. Hello potato salad!


  • 4 medium sized potatoes - add in some sweet potato or Jerusalem artichokes if you wish

  • ¼ cup red onion, chopped

  • 2 stalks spring onion, sliced

  • 1 stalk of celery, chopped

  • 1 hard-boiled egg, peeled and chopped

  • ½ cup natural or coconut yoghurt

  • 1 tbsp. mustard

  • 2 tsp fresh lemon juice

  • 2 tbsp. fresh dill, chopped

  • Sea salt, dulse flakes, salt & pepper as you desire.


Boil potatoes until tender, strain and let cool. Chop potatoes into smaller bite-sized pieces.

In a large bowl, add potatoes, onions, celery and egg. In a small bowl combine yoghurt, mustard, lemon juice, dill and add flavourings to your taste.

Pour the dressing over your potatoes.

If you are short on time (and want the added nutrition of bone broth) use dairy-free Great Guts Mayo as the dressing.
