Cashews – are an easy & beautiful food to eat and really wonderful for improving stress levels and mood. Cashews are high in tryptophan which helps to increase levels of serotonin, our happiness neurotransmitter.

Dr. Andrew Saul in the documentary Food Matters explained that eating two handfuls of raw cashews is equivalent to taking a prescription dose of the antidepressant pill Prozac.

Eat them raw, as a cashew cheese, in a stir-fry, in a raw food desert, in a salad and many more ways.

Creamy Cashew Dip

Ingredients

  • 3 tablespoons water
  • 1 tablespoon lemon juice
  • 1⁄4 cup coriander leaves (chopped)
  • 4 tablespoons yeast
  • 1⁄4 cup tahini
  • 1⁄2 cup cashew nuts (Raw)
  • 2 tablespoons oil (coconut, olive and nut & seed oils are good).

Instructions

Pre-soak your cashew nuts for at least two hours in filtered water.
Drain the water from the cashews and in a food processor process the cashews to a fine grind. Add the rest of the ingredients and blend together.
Depending upon the consistency you are looking for, you can add a little more oil
or water if you want it more like dressing, and less water or oil if you want it more
like soft cheese or dip.
Add fresh corriander, basil or parsley to add colour and flavour if you wish.
You can simply eat this dip with vegetable sticks, make it a bit thinner.
