December is just 2 days away and Christmas is 4 weeks so the party season has well and truly started!
This time of year can be a lot of fun but hard on our bodies. We can eat and drink too much (and foods we don’t usually eat much of), sleep less and stress more.

This is a quick and easy recipe to use for entertaining family and friends that will not only taste great but give back to your body.

The ingredients are fresh and nutritious, pumpkin is high in beta-carotene and has antioxidant capabilities (help clean up the rubbish 😉), and chickpeas are rich in protein, fiber, complex carbohydrates, folate, iron, and zinc. Tahini is very rich in nutrients such as minerals, methionine (for detoxification), calcium & B vitamins.

Ingredients

  • 2½ cups cooked chickpeas
  • ½ cup pureed pumpkin
  • 2 garlic cloves, minced
  • ¼ cup fresh lemon juice
  • 1 heaped tbsp tahini
  • ¼ cup water
  • 1 tsp cumin
  • ¼ tsp cayenne pepper
  • Celtic sea salt to taste
  • 2 tbsp extra virgin olive oil

Process

Place chickpeas, garlic, lemon juice, tahini and water in a food processor and blend until smooth. Continue blending slowly as you add in pumpkin and seasonings and then lastly drizzle in oil until blended. Give it a little taste test and add more seasonings or lemon juice as needed.
